Daitoku has taken great pains in selecting only the finest domestic Japanese ingredients to craft this incredibly refined and high quality seasoning sauce.

The base of this ponzu is Daitoku’s traditionally brewed whole soybean shoyu soy sauce, which is made from 100% domestic, non-GMO ingredients. The soy sauce is expertly blended with pure rice vinegar, traditionally brewed by a vinegar brewery with over 100 years of experience in Fukui prefecture.

Added to the mix is yuzu juice, gently squeezed from fresh yuzu citrus cultivated in Hyogo prefecture, where Daitoku is located, and a 3-years-aged hon mirin, characterized by its rich sweetness and deep flavor, carefully brewed in Aichi prefecture.

But that’s not all. This ponzu gets a gentle sweetness from Hokkaido beet sugar, a natural sweetener derived from non-GMO sugar beets grown in the cool climate of Japan's northernmost island, and a hit of umami from Makurazaki bonito flakes, one of the most esteemed katsuobushi varieties in Japan, known for its mellow flavor and strict production standards.

Finally, domestic Japanese sea-salt, naturally harvested from the bays of Sakito island in Nagasaki Prefecture, balanced out the complex flavor profile of the sauce.

Instructions
